Whole Wheat Oatmeal Cookies

So, these are sort of low carb… or should I say healthy carb, not low carb.  I would not recommend eating many of these if you are on a strict low carb diet.  However, one or two would not hurt every once in awhile.  There is no sugar added to them, which makes them healthier, plus it is all good carbs.  You just don’t want to over indulge in those either if you are shooting for weight loss, or at least according to the diet rules you shouldn’t.

Whole Wheat Oatmeal Cookies- semi low carb

1 cup whole wheat flour

1 cup oats

1 tsp groud cinnamon

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp ground nutmeg

1/4 tsp ground cloves

1/8 cup splenda brown sugar blend

1 cup unsweetened applesauce

1/4 cup water

1/3 cup oil

2 eggs

1 tsp vanilla extract

Optional- bittersweet chocolate chips or raisins

Combine all ingredients in a mixing bowl.  Beat Well.  Drop by spoonfuls onto a lightly oiled baking sheet.  Bake at 375 for 10-15 minutes or until browned.

They were good.  Almost too good.  In fact I had to toss some out because I was having a hard time limiting my carbs.  But if you are dying for a treat or a chocolate chip cookie these are much better than the alternative.  There is no artificial sweetener aftertaste, thank goodness.  I really don’t like the taste of Splenda.  Luckily these tasted great.

  1. Yum! I think this winter because it is so cold and snowy I am not doing well with the carbs. It is keeping us warm, lol! I’ll be better in the Spring!

  2. I have a hard time with “Healthy” cookies, too! I think “Oh, they aren’t that bad…” and then I turn into the COOKIE MONSTER! Too much of a good thing can turn bad, right? But I think I might try this recipe for Young Women’s tonight-along with good ole Rice Krispy Treats. Thanks for the recipe!
    p.s. Looks like the boys enjoyed them, too!
