Back to school dinner- Ceviche

It is the night before 1st grade!  Ahhhh. 

I always try to make a big yummy kind of special dinner for Back to School nights whether they be after summer vacation, Christmas vacation or Spring Break.  Tonight I made Ceviche.  Only I cheated.  I used precooked crab and shrimp.  It was delicious! 

 

This dish is so easy to prepare.  I love finding easy and quick ways to make yummy dishes.

Ingredients:

Package salad shrimp

Package imitation crab

3 cucumbers

4 tomatoes

1 bell pepper or 2 jalapenos if you like a little heat

1/2 of a bundle of cilantro

1/2 white onion

1-2 avocados

1/2 cup lime juice- I like to use fresh

1/2 tablespoon garlic powder

Chop or dice all veggies and cilantro.  Rinse shrimp and crab.  Put all in a large bowl and mix.  Sprinkle with garlic powder and mix again.  Then cover in lime juice.  Mix again.  Place in refigerator for at least 30 min to make sure it is nice and chilled.

Slice or dice avocado.  You can mix in the avocado but I prefer to leave it on the side so that if there are left overs the avocado does not brown.  Also, people can add as much or as little avocado as they wish.

Serve with hard corn tostadas and sour cream.  Yummy!  We had flan for dessert however that was from a box mix so there is no recipe for that!  Hehe.
