This is one of my new favorite things to make during summer. Blueberries are fresh and easily accessable (and affordable) during the summer months.
I found this recipe while searching for summer fruit salad recipes. The original recipe called for shortening to be added to the chocolate (yuck) but I simply left that out and it was delicious.
Ingredients: (haha, there are only two)
Semi sweet chocolate (I tried to use dark Giradelli chocolate, don’t do it, it hardens and gets all wierd right away. Stick with Tollhouse)
Fresh Blueberries
Simply melt the chocolate on the stove top over low heat until smooth. Then toss in a few blueberries at a time. I found the best clusters were 2-3 berries.
Plop them on a cookie sheet lined with wax paper and stick them in the freezer for about an hour.
Take them out and watch them disappear quickly. They are yummy bite size treats. They are healthier than some also due to the vitamins and antioxidants in the blueberries.
Win.win.
Hooray!
