Scallops with Vanilla, Lemon, Lobster Sauce

OMG, You Guys!

I ate the most amazing thing this weekend!

Scallops with Vanilla, Lemon, Lobster Sauce over Sour Cream and Chive Mashed Potatoes.

Mmmmmmmm.  Just thinking about it is making my mouth water.  All 4 of us resorted to licking our dishes when we were finished eating.

Where did I get this wonderful recipe?  I picked up a copy of the Disney Kitchen Cookbook while on our trip to Disneyworld this January.  This book has some amazing recipes featured not only at the Disney Parks but at the Resorts as well.

The best part of the recipe was the sauce.   I mean, anyone can make sour cream and chive potatoes, and sauteeing scallops is not hard, but this sauce was to die for!  I mean, can you say mouthgasm?!

So, I thought I would share the recipe.

Vanilla, Lemon and Lobster Sauce

 2 Minced shallots

1 tbsp clarified butter

1 cup white wine

1 cup chicken stock

1/8 tsp vanilla extract

1 small pinch of saffron

3 tbsp diced tomatoes

1 tbsp diced tomatoes

1 tbsp chopped fresh thyme

1 tbsp fresh squeezed lemon juice

6 tbsp unsalted butter softened

1 lobster steamed cracked and deveined

Directions

Saute shallots in clarified butter in saucepan over medium high heat

Add white wine and reduce 1/3 cup.

Add chicken stock, vanilla and saffron and reduce again by half until about 2/3 cup of liquid remains.

Add tomatoes, chopped thyme and lemon juice.

Remove saucepan from heat and slowly whish in unsalted butter.  Add lobster meat.

Mixture resemble a creamy lobster saffron stew.

This sauce was amazing over the top of sauteed scallops and sour cream and chive mashed potatoes.

I was seriously impressed with the Disney Chefs!

  2. You can buy clarified butter at the store. Our local walmart carries it. Basically it is butter with the milkfat removed. Like when you eat lobster in a restaurant and it is just yellow, no white. You can make it yourself easily by melting the butter and seperating it from the white foamy part from the yellow buttery part. The book is amazing, I have tried a few recipes in it and they are yummy. And the kids think it is extra special because they are disneyland/disneyworld recipes.

  3. It sounds amazing!!! One I’ll have to try when I want my hubby to losen up on our budget.;) But what is clarified butter? Is that a cooking term or an actual product?
    Can’t wait to try! Maybe I’ll even purchase the book on Amazon.:) Thanks for sharing a delectable recipe.
