I discovered this little treat in my early twenties when I was dating a young chef.
Of all the yummy things I have had cooked for me over the years, this one is a treat that has stayed with me. For some reason it is the ultimate comfort food for me.
Something about carbs, with olive oil and tomatoes…mmmmm.
Here is the directions to make this little snack for yourself. Sometimes I even eat this for dinner with a little side salad.
Take a loaf of french bread (or italian will do too). I like Udi’s Sourdough.
Slice off a few thick slices. It works well when they are about 3/4 of an inch to an inch thick.
Coat a pan with olive oil and cook the bread on med/high until they toast up. It is ideal to have a bit of “burnt”, it adds to the flavor, but just toasty works too.
Once your bread is done, you cut a bunch of cherry tomatoes in half. I use about 3 cherry tomatoes per slice of bread. Squeeze the insides out of each cherry tomato onto the bread.
The only part of the tomato you will use is the insides so you will end up with a pile of squeezed tomatoes like this. I give these to my kiddos to eat, they gobble them right up.
Drizzle each slice of bread with a touch of olive oil and dash them with a bit of salt.
Eat up! Yummmy!
Hope you enjoy this light dinner just as much as I do. Especially in the summer when having a large heavy meal doesn’t sound enticing, this is a perfect treat with a big salad.
