Homemade Horseradish

Remember I mentioned a few weeks back that we were coop gardening with my parents this year out on their country property?  If not you can catch up on that here.

In my father’s garden is growing horseradish.  He planted it a couple years ago, but never does anything with it.  He wasn’t sure what to do with it, and my mom wanted no part of trying to use it.

As father’s day as approaching I thought it would be a great opportunity to use some of it and show my dad what a commodity he had growing there.

I dug up a piece of the root.  Here is what it looks like.  Spring and early summer are apparently the best times to dig it up to use or plant elsewhere.

 

You have to use a veggie peeler and scrape off the outer “bark” of the root.

Then I put it in my new Ninja blender that I was given for our anniversary this year.  This puppy is powerful!

I ground it up and slowly added two tablespoons of water and one tablespoon of white vinegar.

 

It turned out potent and flavorful.

 I packaged it up in two small mason jars, one for my father and one for my father in law.  Mmmm…horseradish for fathers day!

  1. Interesting…I guess I never thought about how horseradish was made. How clever of you to come up with this as a gift! I imagine that it is true with horseradish as it is with anything else, fresh is always better!
