During the summer, I can live on salads. I need something crisp and cool to combat this hot and dry weather we have in Colorado.
Here is my current favorite salad.
I take pieces of frozen flounder purchased in my grocery freezer section. I always have a bag of frozen fish in my freezer for those last minute dinner ideas.
Place them frozen in a pyrex pan and top with a spoonful of prepared pesto.
Bake for 30 minutes at 375.
While that is baking I plate up my salads. I like to buy the prechopped mixed greens. I place a pile of it on each plate. Top with cucumber, tomato and some slices of avocado. You can use whatever veggies you have around from your garden. The more the merrier.
Then you can add whatever type of cheese you have on hand. I have used goat cheese, feta, mozzerella. This time I happened to have some slice gouda so I diced it up and sprinkled it on each salad.
Once the fish is done and is flaky, you simply place it on top of your salad and top with a nice vinegrette or italian dressing. We currently are using Olive Garden dressing but I am sure any italian will be tasty.
This is seriously an addicting salad. It is salty, creamy, tangy, warm, cold, crisp and refreshing all in one. AND it only took a few minutes of actual prep time. I LOOOOVE that.

I don’t think I’ve ever tried Flounder…but Michael enjoys seafood. I’ll have to try it for when we have company!:)
