Spagetti Squash is in season right now so I have been looking for new and interesting ways to prepare it.
This recipe is really easy to prepare and pretty tasty. My kids really enjoyed it.
Ingredients:
1 Spagetti Squash
Chopped Garlic
1 cup grated Mozzerella Cheese
1 can chopped tomatoes
1 can artichoke hearts
1 package mushrooms chopped up
Cut the spagetti squash in half and place in baking dish open side down. Make sure there is about of inch of water in the baking dish.
Bake for 1 hour at 350 degrees.
Once the spagetti squash is baked carefully remove the middle portion of the squash and discard.
Scoop out the meaty part of the squash and place in a greased casserole dish.
In a bowl mix together the garlic, tomatoes, artichokes and mushrooms. Spread over the top of the squash.
Bake for 20 minutes.
Sprinkle 1 cup grated mozzerella cheese and bake an additional 5 minutes or until the cheese is melted.
Eat.

Don’t be sorry. We are actually meatless everyday, but I really like the Meatless Monday idea. I think it is good for people to be aware of thier impact on the earth when it comes to what they eat. Not to mention the impact on thier bodies. Even if it is just one day a week, it makes a big difference! I hope you like the squash. We have been eating alot of it!
I am going to try this tonight because I love Spaghetti Squash! Zero point pasta makes me sooo happy! But I am going to add chicken in the place of artichoke hearts because I don’t have any right now and do not want to go to the store! But I promise I will try artichoke hearts later.
Did you know I had never even heard of an artichoke until I ate dinner at your house? Do you remember that? Your whole family was dipping this leafy chunk-of-something into hot melted butter(?) and I thought what the heck!?
