I made these pumpkin chocolate chip muffins last week for our Halloween brunch. They are so yummy that I feel the need to make them at least once every couple of weeks during the fall. Why not?
Ingredients:
3/4 cup sugar
1/4 cup veg oil
2 eggs
3/4 cup canned pumpkin
1/4 cup water
1 and 1/3 cups all purpose flour
1/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
3/4 cup mini semisweet chocolate chips
Preheat oven to 400 degrees
Mix sugar oil and eggs. Add pumpkin and water. In seperate bowl mix all dry ingredients. Add dry mixture to wet and stir. Add chocolate chips.
Fill muffin tins 2/3 full and bake in preheated oven for 20 to 25 minutes.
Eat and enjoy fall!
This time of year is really not good for the size of my tummy. Sigh.
